Mutton Khichudi | Bengali Recipe

Ingredients

  • Mutton: 250 grams, cut
  • into small pieces
  • Basmati Rice: 1 cup
  • Yellow Moong Dal: 1/2 cup
  • Onion: 1 large, finely sliced
  • Tomato: 1 large, chopped
  • Green Chilies: 2, slit
  • Ginger-Garlic Paste: 1 tablespoon
  • Turmeric Powder: 1/2 teaspoon
  • Red Chili Powder: 1 teaspoon
  • Garam Masala: 1 teaspoon
  • Cumin Seeds: 1 teaspoon
  • Bay Leaf: 1
  • Cinnamon Stick: 1 small piece
  • Cloves: 2-3
  • Cardamom: 2
  • Salt: to taste
  • Oil/Ghee: 3 tablespoons
  • Water: 4 cups
  • Fresh Coriander: for garnish

Instructions

Prep the Rice and Dal:
Rinse the basmati rice and moong dal together and Soak them for 20-30 minutes.
Cook the Mutton:
In a pressure cooker, heat 2 tablespoons of oil/ghee .
Add cumin seeds, bay leaf, cinnamon stick, cloves, and cardamom. Sauté for a minute until fragrant.
Add the sliced onions and cook until golden brown.
Stir in the ginger-garlic paste and green chilies, cooking for another 1 minute.
Add the mutton pieces, and turmeric powder, red chili powder, and salt. Cook until the mutton is browned.
Add the chopped tomatoes and Pressure cook (2 whistles.) until they turn soft and the oil starts to separate.
