Chal Potol | Bengali Veg Recipe

Ingredients

  • 500g Potol (Pointed Gourd)
  • 250g Potatoes
  • 50g Tomato
  • 50g Gobindobhog Rice
  • 15g Cashew Nuts
  • 15g Raisins
  • 35g Sarfa Mustard Oil
  • Spices: Red Chillies, Bay Leaves, Cardamom, Cloves, Cinnamon, Cumin Seeds, Ginger Paste, Coriander Powder, Cumin Powder, Turmeric, Red Chilli Powder, Garam Masala
  • Ghee, Salt, Sugar, Green Chillies

Instructions

  1. Dry-rinse the gobindobhog rice and set aside.
  2. Prepare the potol, peel and halve, and chop potatoes and tomatoes.
  3. Fry cashews, raisins, and gobindobhog rice in a pan, then set aside.
  4. In Sarfa Mustard Oil, fry the potol until browned, then set aside.
  5. Temper the oil with whole spices, fry potatoes, and cook with a spice slurry.
  6. Add the tomatoes, rice, and fried potol, and cook until the rice and potol are tender.
